This summer, the MERF house is having a summer social once a month for our senior lunch bunch crew. In July, the social was sponsored by St. Joseph's on the Mountain Episcopal Church. It was a big hit with the crowd as we had fun Watermelon Cake prepared by St. Joseph's members and home baked cookies. A last minute surprise came when Camp DeSoto Phoebe girls picked blueberries for the social and wanted to attend. So the oldest girls at Camp De Soto came to the community house and helped to serve the watermelon cake, to visit with the Mentone seniors and to sing. It was a blast so here are some pics and a video to enjoy.
The Watermelon Cake was found on the Martha Stewart website and it turned out to be easy and fun to do. Thanks to Ann Chesnut, Glenda Ingram, Shirley Hussel and Wesley Griffith for being willing to make it happen. Liz Baker was kind enough too to bring home baked cookies to add to the festivities. Glenda, Hannah and Sarah had played with the idea at Mountain Laurel Inn B&B one day to see if it could be as easy as described on the website and it was so. Here's what you need, a seedless watermelon, blueberries, a melon baller, a star shaped cookie cutter, a sharp knife, and wooden skewers or stir straws.
Cut top and bottom thirds off 1 seedless watermelon ; reserve. Cut middle third of watermelon into wedges. Scoop flesh from 1 end into balls using a melon baller. Arrange balls on top of wedges Take the other end and slice it about 1/2 inch thick and lay it down on the cutting board. Use the star cookie cutter and make stars. Insert the skewer into the wedge and alternate spearing blueberries and watermelon stars.

Ann really outdid herself with these watermelon concoctions. This looks like a great activity for children to create...just add a cool cookie cutter, skewers, and watermelon. I especially like that the social was not only watermelon and that cookies were also thrown into the mix, Cookies are never a bad idea in my opinion.
